Two of my favorites...and NONE of it for me!!



It's Tuesday so I'm cooking for Lisa's family today. It's very hard to make a cheesecake and not eat it... {just thought I'd share that}.


Vanilla Mousse Cheesecake

40 Nilla Wafers, crushed (1.5 cups)
3T melted butter
4-8oz pkgs. softened cream cheese
1 cup sugar
1 T. plus 1 tsp. vanilla
3 eggs
1 -8oz tub of thawed Cool Whip

Heat oven to 325 degrees.


Crush those Nilla Wafers!

Mix wafer crumbs and butter, press onto bottom of 9" springform pan.

Beat 3 pkgs. of cream cheese with 3/4 cup of sugar, and 1 T. vanilla until well blended.



Add eggs one at a time and mix on low speed until just blended.



Pour mixture over crust.




Bake 50-55min. until center is almost set.
Run knife around rim of pan to loosen cake.

Cool completely in pan.

Beat remaining cream cheese, sugar and vanilla in a large bowl until well blended.

Whisk in Cool Whip.


Spread over cheesecake and refrigerate for 4 hours!
Remove rim of pan before serving



Garnish with your favorite fruit...or sauce...or just Nilla crumbs!


Warning:
If you're trying to lose weight for your son's wedding, do not eat this...and yes the crumbs count....AND if you have any pride, you will not lick the Cool Whip container...or any of the bowls...or spoons.


I'm also making my Chicken Scampi recipe. I've had this recipe for years and I've tweaked it, added this, subtracted that,..it's certainly got some calories, but it's really, really good...{tons of butter is involved}.
Here it is...

Chicken Scampi

2-3# of chicken, cut in 1" pieces
2 sticks of butter
4 cloves of minced garlic
2 green onions, chopped
1 T. fresh parsley
1 tsp. fresh dill weed
1/2 tsp. fresh oregano
{you can use dried herbs, fresh is always a little better}
1/2 tsp. coarse salt
1/4 tsp. black pepper
Cooked brown or white rice
{I usually make 4 cups, it's up to you}


Preheat oven to 350 degrees.
Place chicken in a 9x13 glass casserole dish.



In a saucepan, add all the other ingredients except the rice.
Cook on medium heat for 3min.



Pour over chicken.




Bake for 15min., turn chicken over and bake another 15min.

Broil for 3min.
Add rice and serve.










FYI...
{Big Daddy and I are dining on Boca Burgers and salad with a light vinagerette dressing...and possibly a Weight Watchers frozen treat later.
I'm fine with that...really. Not a problem.}
