If Life Gives you Basil, Make Pesto!

I can't resist a bargain... so when Trader Joe's was about to remove what they thought was old basil, I scooped it up for a song...not really a song. I've had this  pesto recipe for years, I'm not sure where it came from...it's very easy and great on pasta or as bruschetta...or both.


Basil is a great source of Vitamin A and magnesium. It also aids digestion...{I'm just a wealth of nutritional info}.






Pesto

2 c. packed fresh basil leaves
1/2 clove minced garlic
1/3 c. fresh grated Parmesan cheese
salt and pepper
3 Tbsp. good olive oil
1 Tbsp. water

In a food processor, pulse basil, garlic, cheese, salt and pepper, until finely chopped.



With processor running, gradually add oil and water until well blended...



Variation: you can add 1/4 c. of pine nuts to food processor before the olive oil is added.





I had my pesto with a little pasta...

  1. Oh that looks delicious! I need to get my tail to the local greenhouse and get my herbs in the ground. I can just see this on a nice chewy piece of french bread.
