Saturday Cupcakes


TEEN Magazine: What’s the strangest dream that you’ve had?
V.A.: It was so random and it felt so real. My sister was marrying a cupcake. And then a cupcake shot up into the air and made cupcake babies and there was a whole bunch of them. My dad was like, “This is a suitable husband for you.” So I married a cupcake, too!

Thought I'd make some cupcakes, with a MIX...{ how did that find it's way into my pantry? }
I decided to use my new pancake dispenser to avoid the mess I usually create when pouring batter into little paper liners...I love this!!

I added a little green food coloring for good luck...(Go Irish)





































My frosting recipe is stolen borrowed from SouthernFood.com

CREAMY BUTTER FROSTING

1/3c softened butter
1/4 tsp salt
1 tsp vanilla extract
3 1/2c (16oz) of SIFTED confectioners sugar
3-4T milk


Cream butter, salt, and vanilla, beating until light and fluffy.
Add sugar gradually and beat after each addition.
Add 3T of milk, beating until smooth. Beat in more milk until desired consistency is reached.

This recipe makes about 2 1/3 cups of frosting, enough to frost tops and sides of an 8in, 2 layer-cake or one dozen cupcakes.

I found these cute boxes at Michael's for $1...so I went back for more and they were all gone..more proof that if you see something, get it (especially if it's a dollar).







































Ok,this post wasn't unbelievably creative nor difficult (especially since a cake mix was involved), but I had some fun, and I hope you enjoy the frosting recipe...it is a family favorite.
