There's a chill in the air...


...and the leaves are changing.




That means it's time for soup!








Chicken Tortilla Soup


1# chicken, skin removed,
if you're in a hurry, a roasted chicken from the deli works great!
3 C water
2 cans (14-15 oz each) chicken broth,
low sodium fat free is a good choice.
1 can (15 oz) black beans, rinsed
1 can (14-15 oz) kernel corn
1 can (14-15 oz) diced tomatoes with green chiles
1/2 tsp. ground cumin
1/2 tsp. dried oregano
1 C crumbled tortilla chips
1/2 C chopped cilantro

Bring chicken and water to a boil in a large saucepan.
Reduce heat, cover and simmer for 25 min. or until chicken is cooked.
 Remove chicken from pan, let cool slightly, and remove chicken from bones, shred chicken and set aside. Add broth to the pot, bring to a boil.


{If you're in a hurry and using a deli roasted chicken, just mix water and broth in the saucepan and simmer for 10 min., then add your roasted, shredded chicken}


Stir in beans, corn, tomatoes, cumin, and oregano, and bring to a simmer.
Simmer 5 min. for flavors to blend.


Add chicken to the soup...it's already in there if you cheated and used a roasted chicken!




Stir in tortillas, and cook for a minute to soften them.
Remove from heat and stir in cilantro.
