Chicken tonight?

Last Tuesday's dinner seemed to be somewhat of a success, so here's the recipe if you're interested...any recipe that calls for Ritz crackers interests me.


Cheddar Chicken

16-20 Ritz crackers, crushed ( 3/4 c.)
8 ounces of grated cheddar cheese
{I grated an 8oz chunk of cheddar, but also threw in some packaged shredded cheddar...you can't have too much cheese!}
1 clove garlic, minced
Kosher salt and black pepper
4 boneless chicken breasts
5 Tbsp. melted butter


Heat oven to 350 degrees
In a bowl combine crackers, cheese, garlic, and 1/4 tsp. each of salt and pepper.
Dip the chicken in the melted butter, then the cracker mixture, press gently to adhere...



...and place on a foiled lined, lightly oiled baking sheet.

Sprinkle remaining cracker mixture on chicken and drizzle remaining butter on top.

Bake until chicken is golden brown,
aprox. 30-35 min.





I also made a very quick and light semi-vinagarette dressing...

Creamy Parmesan Dressing


1/2 c. olive oil
1/2 c. grated parmesan cheese
1/4 c. lite sour cream
2 Tbsp. white wine vinegar
2 Tbsp. water
Kosher salt and black pepper, 1/4 tsp each


In a small bowl, whisk together all ingredients.
