For the Love of Soup...

I love soup.
It's comfort in a bowl.
I love the warmth when it's soooo cold outside.
Yesterday I made...



CHICKEN TARRAGON NOODLE SOUP

6oz egg noodles
2T olive oil
1c chopped scallions
 4 bacon slices, chopped
2T fresh tarragon, chopped
3c cooked chicken (I used cooked Perdue chicken..I was in a hurry!)
2/3c white wine
5c chicken broth or vegetable stock
salt and pepper

Cook noodles according to package directions, drain, and run under cold water, set aside.
Heat oil in pan, add scallions and bacon and cook over low heat for 5min.


Add the tarragon and chicken and cook until heated through.


Pour in wine and cook until alcohol evaporates.
Pour in enough broth to cover the chicken, reduce heat, and simmer until heated thoroughly and bacon is cooked through.
Pour in remaining stock, season with salt and pepper.
Add the cooked noodles and heat through. 


Sprinkle some grated parmesan cheese on top.
Serve with crusty bread.
